Heat a small skillet over medium heat. Add the oil and heat to a shimmer. Add the garlic, ginger, chopped green onions and season with salt
and pepper. Cook till softened and remove from heat. Cool completely and refrigerate till ready to make your dumplings.
To make the dumplings:
Be sure to store the wrappers under a damp towel to keep them from drying out while you are forming the dumplings.
Make sure that the pork you use is very cold. Combine the cooked and cooled green onions with garlic and ginger with chilled pork and the
remaining ingredients. Fold to combine. Cover and refrigerate till ready to make your dumplings.
To make the Gyoza: Heat 2 Tblsp of oil in a medium nonstick skillet. Heat to a shimmer. Add a layer of dumplings leaving a little space
between. Allow to fry for 2-3 minutes. Add 1/8th cup of water to for steam. Cover and cook till the water has evaporated. Repeat twice.
After the water has evaporated the second time allow to fry until browned. Once browned cover the pan with a plate and flip the dumplings
onto the plate. You want the dumplings to be pan fried and golden on one side and soft and steamed on the other.
